There have been a few videos of someone dodging a blue shell using a mushroom in Mario Kart 7, but I wanted to wait to post one until I did it. So, here you go. This is a video of a replay of me doing it.If you want to see the moment of the dodge, it's at 4:11 and 6:30. I spend most of the time talking about how to do it.
In case you want a text version of it: You have to hit your mushroom the moment the blue shell starts its attack downward. The window is much tighter than in Mario Kart Wii, where you could use your mushroom the moment it stops above you.
